Beef Chow Fun
Enjoy a classic Cantonese dish featuring tender beef and wide rice noodles stir-fried with bean sprouts and green onions in a savory sauce.
Ingredients
- 1 lb flank steak
- 1½ lb fresh wide rice noodles
- 8 oz bean sprouts
- 4 green onions
- 3 clove garlic
- 1 tbsp ginger
- 4 tbsp soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 3 tbsp vegetable oil
- 1 tsp sugar
- ½ tsp white pepper
Steps
- Thinly slice the flank steak against the grain. In a bowl, marinate the beef with 1 tbsp soy sauce, 1 tsp cornstarch, 1 tsp vegetable oil, and 0.5 tsp white pepper. Set aside for 15 minutes.
- Prepare the sauce by combining the remaining 3 tbsp soy sauce, 2 tbsp dark soy sauce, 2 tbsp oyster sauce, 1 tsp sesame oil, and 1 tsp sugar in a small bowl.
- Separate the fresh wide rice noodles gently to prevent tearing. Mince the garlic and ginger, and slice the green onions into 2-inch pieces, separating the white and green parts.
- Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Stir-fry the marinated beef until browned, about 2-3 minutes. Remove beef and set aside.
- Add the remaining 2 tbsp vegetable oil to the wok. Add the minced garlic, ginger, and white parts of the green onions, stir-frying for 30 seconds until fragrant.
- Add the wide rice noodles to the wok and stir-fry for 2-3 minutes, tossing gently to avoid breaking them. Add the bean sprouts and stir-fry for another minute.
- Return the beef to the wok. Pour in the prepared sauce and toss everything together quickly until the noodles are evenly coated and heated through. Add the green parts of the green onions and toss once more.
- Serve immediately and enjoy your Beef Chow Fun.
