Caprese Chicken Skillet
This easy one-pan skillet features tender chicken breasts topped with fresh mozzarella, ripe tomatoes, and fragrant basil, all drizzled with balsamic glaze.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1½ cup cherry tomatoes
- 8 oz fresh mozzarella balls
- ½ cup fresh basil leaves
- 2 tbsp balsamic glaze (optional)
Steps
- Pat chicken dry and season with garlic powder, oregano, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add cherry tomatoes to the skillet and cook for 3-5 minutes, until they begin to soften and burst.
- Return chicken to the skillet. Arrange mozzarella balls around and on top of the chicken and tomatoes.
- Cover the skillet or place in a preheated oven at 375°F (190°C) for 5-7 minutes, until mozzarella is melted and bubbly.
- Remove from heat, sprinkle with fresh basil, and drizzle with balsamic glaze if desired. Serve immediately.
