Caprese Chicken Skillet

This easy one-pan skillet features tender chicken breasts topped with fresh mozzarella, ripe tomatoes, and fragrant basil, all drizzled with balsamic glaze.

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1½ cup cherry tomatoes
  • 8 oz fresh mozzarella balls
  • ½ cup fresh basil leaves
  • 2 tbsp balsamic glaze (optional)

Steps

  1. Pat chicken dry and season with garlic powder, oregano, salt, and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add cherry tomatoes to the skillet and cook for 3-5 minutes, until they begin to soften and burst.
  4. Return chicken to the skillet. Arrange mozzarella balls around and on top of the chicken and tomatoes.
  5. Cover the skillet or place in a preheated oven at 375°F (190°C) for 5-7 minutes, until mozzarella is melted and bubbly.
  6. Remove from heat, sprinkle with fresh basil, and drizzle with balsamic glaze if desired. Serve immediately.
