Caprese Pasta
A delightful and fresh pasta dish featuring the classic flavors of Caprese salad with ripe tomatoes, fresh mozzarella, and fragrant basil.
Ingredients
- 12 oz pasta
- 2 cup cherry tomatoes
- 8 oz fresh mozzarella balls
- ½ cup fresh basil leaves
- 2 tbsp olive oil
- 2 clove garlic
- 2 tbsp balsamic glaze (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain.
- While pasta cooks, halve the cherry tomatoes and thinly slice or tear the fresh mozzarella.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-5 minutes until they begin to soften.
- Add the drained pasta to the skillet with the tomatoes. Stir in the fresh basil, mozzarella, salt, and pepper.
- If desired, add a splash of reserved pasta water to create a light sauce. Toss gently until mozzarella slightly melts.
- Serve immediately, optionally drizzled with balsamic glaze.
