Chakchouka
A vibrant and flavorful Tunisian dish featuring eggs poached in a rich, spiced tomato and pepper sauce.
Ingredients
- 4 tomatoes
- 2 tbs olive oil
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 3 clove garlic
- 1 tsp cumin
- 1 tsp paprika
- ¾ tsp salt
- ½ tsp chili powder
- 4 eggs
- 1 serving crusty bread or pita (optional)
Steps
- Heat olive oil in a large cast-iron skillet or sauté pan over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened.
- Stir in sliced red and green peppers and crushed garlic; sauté for another 3-5 minutes.
- Add tomatoes, cumin, paprika, salt, and chili powder. Mix well and bring the mixture to a simmer.
- Reduce heat to medium-low and simmer, uncovered, for 10-15 minutes until the sauce thickens to your desired consistency.
- Using the back of a spoon, create four indentations in the sauce. Crack one egg into each indentation.
- Cover the skillet and simmer for 5-7 minutes, or until the eggs are set to your liking.
- Serve immediately, optionally with crusty bread or pita.
