Chakchouka

A vibrant and flavorful Tunisian dish featuring eggs poached in a rich, spiced tomato and pepper sauce.

Ingredients

  • 4 tomatoes
  • 2 tbs olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 clove garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • ¾ tsp salt
  • ½ tsp chili powder
  • 4 eggs
  • 1 serving crusty bread or pita (optional)

Steps

  1. Heat olive oil in a large cast-iron skillet or sauté pan over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened.
  2. Stir in sliced red and green peppers and crushed garlic; sauté for another 3-5 minutes.
  3. Add tomatoes, cumin, paprika, salt, and chili powder. Mix well and bring the mixture to a simmer.
  4. Reduce heat to medium-low and simmer, uncovered, for 10-15 minutes until the sauce thickens to your desired consistency.
  5. Using the back of a spoon, create four indentations in the sauce. Crack one egg into each indentation.
  6. Cover the skillet and simmer for 5-7 minutes, or until the eggs are set to your liking.
  7. Serve immediately, optionally with crusty bread or pita.
