Cheese Borek
Crispy phyllo triangles filled with a savory blend of Gouda, Emmentaler, egg, parsley, garlic, and a hint of red pepper, baked until golden brown.
Ingredients
- 1 egg
- ½ bunch fresh parsley
- 2 clove garlic
- ¾ tsp crushed red pepper
- 6 oz Gouda cheese
- 6 oz Emmentaler cheese
- 12 sheet phyllo dough
- 1½ cup unsalted butter
Steps
- In a medium bowl, whisk together the egg, chopped parsley, minced garlic, and crushed red pepper. Stir in the shredded Gouda and Emmentaler cheeses.
- Preheat oven to 350°F (175°C). Lightly butter a large baking sheet.
- Melt the unsalted butter. Take one sheet of phyllo dough, brush it lightly with melted butter, then cut it lengthwise into 4 strips.
- Place a rounded teaspoon of the cheese mixture at one end of each strip. Fold the corner of the strip over the filling to form a triangle, then continue folding in triangular fashion along the strip's length.
- Repeat with the remaining phyllo sheets and filling until all are used.
- Arrange the stuffed phyllo triangles in a single layer on the prepared baking sheet.
- Bake for 30 minutes, or until the borek are lightly browned and crispy. Serve warm.
