Ingredients
- ½ cup semolina
- ¼ cup unsalted butter
- 1 egg

Steps
- In a bowl, beat room temperature butter until creamed. Season with salt and a pinch of nutmeg.
- Stir in the egg vigorously, then gradually add semolina, mixing until smooth. Cover and let rest for 15-20 minutes.
- Bring a large pot of salted water to a boil. Using two spoons dipped in hot water, shape the semolina mixture into small dumplings.
- Carefully add dumplings to the boiling water, reduce heat to a gentle simmer, and cook for 10-15 minutes, turning occasionally. Do not boil vigorously.
- While dumplings cook, heat the beef broth in a separate pot.
- Remove cooked dumplings from water with a slotted spoon and transfer them directly into the hot beef broth.
- Serve immediately, garnished with chopped fresh parsley if desired.
