Ingredients

  • ½ cup semolina
  • ¼ cup unsalted butter
  • 1 egg
  • ½ tsp salt
  • ⅛ tsp nutmeg
  • 1 tsp vegetable oil (optional)
  • 4 cup beef broth
  • 2 tbsp fresh parsley (optional)

Steps

  1. In a bowl, beat room temperature butter until creamed. Season with salt and a pinch of nutmeg.
  2. Stir in the egg vigorously, then gradually add semolina, mixing until smooth. Cover and let rest for 15-20 minutes.
  3. Bring a large pot of salted water to a boil. Using two spoons dipped in hot water, shape the semolina mixture into small dumplings.
  4. Carefully add dumplings to the boiling water, reduce heat to a gentle simmer, and cook for 10-15 minutes, turning occasionally. Do not boil vigorously.
  5. While dumplings cook, heat the beef broth in a separate pot.
  6. Remove cooked dumplings from water with a slotted spoon and transfer them directly into the hot beef broth.
  7. Serve immediately, garnished with chopped fresh parsley if desired.
