Ginger Scallion Chicken
A classic Cantonese-style chicken dish featuring tender chicken infused with aromatic ginger and scallions, perfect for a flavorful weeknight meal.
Ingredients
- 1½ lb boneless, skinless chicken thighs
- 4 inch ginger
- 1 bunch scallions
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tbsp vegetable oil
- 1 tsp sugar
- ½ tsp salt
- 2 cup white rice (optional)
Steps
- Pat chicken thighs dry and cut into 1-inch pieces. Season with salt.
- Finely mince ginger and thinly slice scallions, separating white and green parts.
- In a small bowl, whisk together soy sauce, rice vinegar, 1 tablespoon sesame oil, and sugar to make the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced ginger and white parts of scallions to the skillet. Sauté for 1 minute until fragrant.
- Return chicken to the skillet. Pour in the prepared sauce and stir to coat the chicken. Cook for 1-2 minutes until the sauce slightly thickens.
- Stir in the remaining 1 tablespoon of sesame oil and green parts of the scallions. Serve immediately, optionally over steamed white rice.
