Ginger Scallion Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 4 inch ginger
  • 1 bunch scallions
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp sugar
  • ½ tsp salt
  • 2 cup white rice (optional)

Steps

  1. Pat chicken thighs dry and cut into 1-inch pieces. Season with salt.
  2. Finely mince ginger and thinly slice scallions, separating white and green parts.
  3. In a small bowl, whisk together soy sauce, rice vinegar, 1 tablespoon sesame oil, and sugar to make the sauce.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  5. Add minced ginger and white parts of scallions to the skillet. Sauté for 1 minute until fragrant.
  6. Return chicken to the skillet. Pour in the prepared sauce and stir to coat the chicken. Cook for 1-2 minutes until the sauce slightly thickens.
  7. Stir in the remaining 1 tablespoon of sesame oil and green parts of the scallions. Serve immediately, optionally over steamed white rice.
