Gochujang-glazed Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¼ cup gochujang
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 3 clove garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp vegetable oil
  • 1 tsp sesame seeds (optional)
  • 2 scallions, sliced (optional)
  • 3 cup cooked white rice (optional)

Steps

  1. In a medium bowl, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create the glaze.
  2. Pat the chicken thighs dry with paper towels and season lightly with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-7 minutes per side, until browned and cooked through.
  4. Reduce heat to medium-low. Pour the gochujang glaze over the chicken, turning to coat. Simmer for 3-5 minutes, spooning the sauce over the chicken, until the glaze thickens and coats the chicken.
  5. Remove chicken from skillet and let rest for a few minutes. Slice chicken if desired.
  6. Serve the gochujang-glazed chicken immediately, garnished with sesame seeds and sliced scallions, alongside cooked white rice.
