Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¼ cup harissa paste
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 3 clove garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional)

Steps

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together harissa paste, lemon juice, olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
  3. Add chicken thighs to the bowl and toss to coat evenly with the harissa mixture.
  4. Arrange the chicken thighs in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, or until chicken is cooked through and lightly caramelized.
  6. Garnish with fresh cilantro, if desired, and serve immediately.
