Hungarian Lecso with Sausage

Ingredients

  • 1 lb Smoked sausage
  • 2 Yellow onions
  • 3 Green bell peppers
  • 1 Red bell peppers
  • 4 Tomatoes
  • 3 clove Garlic
  • 2 tsp Smoked paprika
  • 1 tsp Sweet paprika
  • ¾ tsp Salt
  • ½ tsp Black pepper
  • 2 tbsp Vegetable oil
  • ½ cup Water
  • 2 tbsp Fresh parsley (optional)

Steps

  1. Slice the smoked sausage into 1/2-inch thick rounds. Dice the onions, bell peppers, and tomatoes. Mince the garlic.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.
  3. Add the diced onions to the pot and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the diced bell peppers, smoked paprika, sweet paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Add the diced tomatoes and water to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until vegetables are tender.
  6. Return the cooked sausage to the pot and stir to combine. Simmer for another 5-10 minutes to allow flavors to meld.
  7. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
