Hungarian Lecso with Sausage
A hearty and flavorful Hungarian stew featuring bell peppers, tomatoes, and onions, simmered with smoked sausage.
Ingredients
- 1 lb Smoked sausage
- 2 Yellow onions
- 3 Green bell peppers
- 1 Red bell peppers
- 4 Tomatoes
- 3 clove Garlic
- 2 tsp Smoked paprika
- 1 tsp Sweet paprika
- ¾ tsp Salt
- ½ tsp Black pepper
- 2 tbsp Vegetable oil
- ½ cup Water
- 2 tbsp Fresh parsley (optional)
Steps
- Slice the smoked sausage into 1/2-inch thick rounds. Dice the onions, bell peppers, and tomatoes. Mince the garlic.
- Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.
- Add the diced onions to the pot and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced bell peppers, smoked paprika, sweet paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Add the diced tomatoes and water to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until vegetables are tender.
- Return the cooked sausage to the pot and stir to combine. Simmer for another 5-10 minutes to allow flavors to meld.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
