Kenyan Beef Curry
A hearty and flavorful Kenyan beef curry featuring tender sirloin simmered in a rich tomato and spice-infused sauce.
Ingredients
- 2 lb sirloin steak tips
- 4 cup water
- 4 clove garlic
- 2 tsp ground ginger
- 2 tbsp oil
- 2 red onions
- 4 tomatoes
- 2 tbsp paprika
- ½ tsp black pepper
- 2 tsp curry powder
- 4 tbsp tomato paste
- 1 dash salt
- 1 chili (optional)
- ¼ cup cilantro leaves (optional)
Steps
- Boil 4 cups of water in a Dutch oven. Add beef, garlic, and ginger; simmer covered for 20 minutes, then drain and reserve the cooking water.
- Heat oil in the same pot over medium heat. Add onions and cook until softened, 5-7 minutes.
- Stir in tomatoes and cook until they break down, 3-5 minutes.
- Add the drained beef to the tomato and onion mixture and cook for 5 minutes, stirring occasionally.
- Stir in paprika, black pepper, curry powder, tomato paste, and salt.
- Pour in the reserved beef cooking water and additional water to cover. Bring to a boil, then reduce heat and simmer uncovered for about 1 hour, or until beef is tender and sauce thickens.
- Adjust seasonings to taste. Garnish with fresh chili and cilantro, if desired, before serving.
