Kenyan Beef Curry

Ingredients

  • 2 lb sirloin steak tips
  • 4 cup water
  • 4 clove garlic
  • 2 tsp ground ginger
  • 2 tbsp oil
  • 2 red onions
  • 4 tomatoes
  • 2 tbsp paprika
  • ½ tsp black pepper
  • 2 tsp curry powder
  • 4 tbsp tomato paste
  • 1 dash salt
  • 1 chili (optional)
  • ¼ cup cilantro leaves (optional)

Steps

  1. Boil 4 cups of water in a Dutch oven. Add beef, garlic, and ginger; simmer covered for 20 minutes, then drain and reserve the cooking water.
  2. Heat oil in the same pot over medium heat. Add onions and cook until softened, 5-7 minutes.
  3. Stir in tomatoes and cook until they break down, 3-5 minutes.
  4. Add the drained beef to the tomato and onion mixture and cook for 5 minutes, stirring occasionally.
  5. Stir in paprika, black pepper, curry powder, tomato paste, and salt.
  6. Pour in the reserved beef cooking water and additional water to cover. Bring to a boil, then reduce heat and simmer uncovered for about 1 hour, or until beef is tender and sauce thickens.
  7. Adjust seasonings to taste. Garnish with fresh chili and cilantro, if desired, before serving.
