Korean BBQ Tacos

Ingredients
- 1 lb flank steak
- ¼ cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 4 clove garlic
- 1 tbsp ginger
- 1 cup kimchi
- ½ head green cabbage
- 2 carrots
- ½ cup mayonnaise
- 2 tbsp sriracha
- 1 lime
- 12 corn tortillas
- 2 green onions (optional)
- 1 tsp sesame seeds (optional)
Steps
- Thinly slice flank steak against the grain. In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add steak and marinate for at least 20 minutes, or up to 4 hours.
- Prepare the slaw: Thinly slice green cabbage and julienne carrots. In a separate small bowl, whisk together mayonnaise, sriracha, and the juice of half a lime for the spicy mayo.
- Heat a large skillet or grill pan over medium-high heat. Cook the marinated steak in batches until browned and cooked through, about 2-3 minutes per side. Remove from pan and thinly slice into bite-sized pieces.
- Warm the corn tortillas according to package directions (microwave, dry skillet, or oven).
- Assemble tacos: Spoon cooked steak into warm tortillas. Top with shredded cabbage and carrots, a spoonful of kimchi, and a drizzle of spicy mayo.
- Garnish with chopped green onions and sesame seeds, if desired, and serve immediately.
