Laksa Large shrimp Noodles

A fragrant and spicy Malaysian noodle soup featuring succulent large shrimp in a rich coconut broth.

Ingredients

  • 1 tbsp olive oil
  • 1 red chili
  • 2½ tbsp Thai red curry paste
  • 1 vegetable bouillon cube
  • 400 ml coconut milk
  • 2 tsp fish sauce
  • 100 g rice noodles
  • 2 lime
  • 150 g large shrimp
  • ½ pack cilantro (optional)

Steps

  1. Heat olive oil in a medium saucepan and add the finely sliced red chili; cook for 1 minute.
  2. Stir in the Thai red curry paste and cook for another minute until fragrant.
  3. Dissolve the vegetable bouillon cube in 700ml boiling water, then pour into the saucepan with the coconut milk and bring to a boil.
  4. Add the fish sauce and seasoning to taste, then toss in the rice noodles and cook for 3-4 minutes until softened.
  5. Squeeze in the juice of one lime, add the large shrimp, and cook for 2-3 minutes until heated through.
  6. Serve in bowls, garnished with fresh cilantro and lime wedges for squeezing.
