Laksa Large shrimp Noodles
A fragrant and spicy Malaysian noodle soup featuring succulent large shrimp in a rich coconut broth.
Ingredients
- 1 tbsp olive oil
- 1 red chili
- 2½ tbsp Thai red curry paste
- 1 vegetable bouillon cube
- 400 ml coconut milk
- 2 tsp fish sauce
- 100 g rice noodles
- 2 lime
- 150 g large shrimp
- ½ pack cilantro (optional)
Steps
- Heat olive oil in a medium saucepan and add the finely sliced red chili; cook for 1 minute.
- Stir in the Thai red curry paste and cook for another minute until fragrant.
- Dissolve the vegetable bouillon cube in 700ml boiling water, then pour into the saucepan with the coconut milk and bring to a boil.
- Add the fish sauce and seasoning to taste, then toss in the rice noodles and cook for 3-4 minutes until softened.
- Squeeze in the juice of one lime, add the large shrimp, and cook for 2-3 minutes until heated through.
- Serve in bowls, garnished with fresh cilantro and lime wedges for squeezing.
