Miso Salmon with Roasted Vegetables
Flaky salmon marinated in savory miso is roasted to perfection alongside tender seasonal vegetables for a healthy and satisfying meal.
Ingredients
- 1½ lb salmon fillets
- 4 cup broccoli florets
- 2 cup carrots
- 1 red bell pepper
- ¼ cup white miso paste
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sesame oil
- 2 clove garlic
- 1 tbsp ginger
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp sesame seeds (optional)
- 2 green onions (optional)
Steps
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a small bowl, whisk together miso paste, soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
- Chop carrots and bell pepper into bite-sized pieces. In a large bowl, toss broccoli, carrots, and bell pepper with olive oil, salt, and pepper. Spread vegetables in a single layer on one side of the prepared baking sheet.
- Place salmon fillets on the other side of the baking sheet. Brush the miso marinade generously over the salmon fillets.
- Roast for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork, and vegetables are tender-crisp.
- Garnish with sesame seeds and sliced green onions, if desired, before serving.
