Ingredients

  • 1½ lb salmon fillets
  • 4 cup broccoli florets
  • 2 cup carrots
  • 1 red bell pepper
  • ¼ cup white miso paste
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 2 clove garlic
  • 1 tbsp ginger
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp sesame seeds (optional)
  • 2 green onions (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Chop carrots and bell pepper into bite-sized pieces. In a large bowl, toss broccoli, carrots, and bell pepper with olive oil, salt, and pepper. Spread vegetables in a single layer on one side of the prepared baking sheet.
  4. Place salmon fillets on the other side of the baking sheet. Brush the miso marinade generously over the salmon fillets.
  5. Roast for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork, and vegetables are tender-crisp.
  6. Garnish with sesame seeds and sliced green onions, if desired, before serving.
