Nutty Chicken Curry
A creamy and flavorful Indian-inspired chicken curry made with a rich peanut butter and yogurt sauce, brightened with ginger, garlic, and fresh cilantro.
Ingredients
- 1 red chili
- ½ inch ginger
- 1 clove garlic
- ½ bunch fresh cilantro
- 1 tbsp sunflower oil
- 1¼ lb chicken breasts
- 5 tbsp peanut butter
- 0.6 cup chicken broth
- 0.8 cup Greek yogurt
- 2 cup rice (optional)
- 1 lb sweet potato (optional)
Steps
- Finely slice a quarter of the red chili; set aside for garnish. Combine the remaining chili, ginger, garlic, cilantro stalks, and one-third of the cilantro leaves in a food processor. Add a splash of water and blend to a rough paste.
- Heat the sunflower oil in a large frying pan or skillet over medium-high heat. Add the chicken chunks and brown quickly for 1 minute.
- Stir in the curry paste and cook for another minute, stirring constantly.
- Add the peanut butter, chicken broth, and Greek yogurt to the pan. Stir well to combine.
- Bring the sauce to a gentle simmer and cook for 10 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in most of the remaining fresh cilantro.
- Serve the curry hot, garnished with the reserved sliced chili and remaining cilantro.
- Serve with rice or mashed sweet potato, if desired.
