Nutty Chicken Curry

A creamy and flavorful Indian-inspired chicken curry made with a rich peanut butter and yogurt sauce, brightened with ginger, garlic, and fresh cilantro.

Ingredients

  • 1 red chili
  • ½ inch ginger
  • 1 clove garlic
  • ½ bunch fresh cilantro
  • 1 tbsp sunflower oil
  • 1¼ lb chicken breasts
  • 5 tbsp peanut butter
  • 0.6 cup chicken broth
  • 0.8 cup Greek yogurt
  • 2 cup rice (optional)
  • 1 lb sweet potato (optional)

Steps

  1. Finely slice a quarter of the red chili; set aside for garnish. Combine the remaining chili, ginger, garlic, cilantro stalks, and one-third of the cilantro leaves in a food processor. Add a splash of water and blend to a rough paste.
  2. Heat the sunflower oil in a large frying pan or skillet over medium-high heat. Add the chicken chunks and brown quickly for 1 minute.
  3. Stir in the curry paste and cook for another minute, stirring constantly.
  4. Add the peanut butter, chicken broth, and Greek yogurt to the pan. Stir well to combine.
  5. Bring the sauce to a gentle simmer and cook for 10 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Stir in most of the remaining fresh cilantro.
  7. Serve the curry hot, garnished with the reserved sliced chili and remaining cilantro.
  8. Serve with rice or mashed sweet potato, if desired.
