One-Pot French Onion Pasta

Ingredients

  • 3 medium yellow onions
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • ½ cup dry white wine (optional)
  • 4 cups beef broth
  • 12 oz egg noodles
  • 1 tsp Dijon mustard
  • ½ tsp fresh thyme (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup Gruyere cheese
  • 2 tbsp fresh parsley (optional)

Steps

  1. Thinly slice the yellow onions. Mince the garlic.
  2. In a large pot or Dutch oven, melt butter with olive oil over medium-low heat. Add sliced onions and cook, stirring occasionally, for 15-20 minutes until deeply caramelized and tender. Add minced garlic and cook for 1 minute more.
  3. Deglaze the pot with white wine (if using), scraping up any browned bits from the bottom. Cook until the wine has mostly evaporated.
  4. Stir in beef broth, egg noodles, Dijon mustard, thyme (if using), salt, and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes, or until noodles are tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  5. Remove from heat. Stir in shredded Gruyere cheese until melted and creamy.
  6. Serve immediately, garnished with fresh parsley if desired.
