One-Pot French Onion Pasta

Ingredients
- 3 medium yellow onions
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic
- ½ cup dry white wine (optional)
- 4 cups beef broth
- 12 oz egg noodles
- 1 tsp Dijon mustard
- ½ tsp fresh thyme (optional)
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup Gruyere cheese
- 2 tbsp fresh parsley (optional)
Steps
- Thinly slice the yellow onions. Mince the garlic.
- In a large pot or Dutch oven, melt butter with olive oil over medium-low heat. Add sliced onions and cook, stirring occasionally, for 15-20 minutes until deeply caramelized and tender. Add minced garlic and cook for 1 minute more.
- Deglaze the pot with white wine (if using), scraping up any browned bits from the bottom. Cook until the wine has mostly evaporated.
- Stir in beef broth, egg noodles, Dijon mustard, thyme (if using), salt, and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes, or until noodles are tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Remove from heat. Stir in shredded Gruyere cheese until melted and creamy.
- Serve immediately, garnished with fresh parsley if desired.
