Pesto Chicken Pasta
A quick and flavorful pasta dish featuring tender chicken and vibrant pesto.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 12 oz pasta
- ½ cup pesto
- 1 cup cherry tomatoes (optional)
- ¼ cup Parmesan cheese (optional)
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.
- While pasta cooks, dice chicken breasts into 1-inch pieces. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Add cooked pasta to the skillet with the chicken. Stir in pesto and cherry tomatoes (if using).
- Add a splash of reserved pasta water if needed to create a saucier consistency.
- Toss everything together until well combined and heated through.
- Serve immediately, garnished with grated Parmesan cheese if desired.
