Pesto Gnocchi
Enjoy a simple yet satisfying Italian meal with tender potato gnocchi tossed in a vibrant basil pesto.
Ingredients
- 18 oz potato gnocchi
- ¾ cup basil pesto
- 1 pint cherry tomatoes (optional)
- ¼ cup Parmesan cheese (optional)
- ¼ cup fresh basil (optional)
- 1 tbsp olive oil (optional)
Steps
- Bring a large pot of salted water to a boil.
- Add gnocchi to the boiling water and cook according to package directions, usually 2-3 minutes, until they float to the surface.
- While gnocchi cooks, warm pesto in a large skillet over low heat, or simply add to a serving bowl.
- Drain the cooked gnocchi and add directly to the skillet with the pesto, or to the serving bowl.
- Toss gently to coat the gnocchi evenly with the pesto.
- Serve immediately, optionally garnished with halved cherry tomatoes, grated Parmesan, and fresh basil.
