Pesto Gnocchi

Ingredients

  • 18 oz potato gnocchi
  • ¾ cup basil pesto
  • 1 pint cherry tomatoes (optional)
  • ¼ cup Parmesan cheese (optional)
  • ¼ cup fresh basil (optional)
  • 1 tbsp olive oil (optional)

Steps

  1. Bring a large pot of salted water to a boil.
  2. Add gnocchi to the boiling water and cook according to package directions, usually 2-3 minutes, until they float to the surface.
  3. While gnocchi cooks, warm pesto in a large skillet over low heat, or simply add to a serving bowl.
  4. Drain the cooked gnocchi and add directly to the skillet with the pesto, or to the serving bowl.
  5. Toss gently to coat the gnocchi evenly with the pesto.
  6. Serve immediately, optionally garnished with halved cherry tomatoes, grated Parmesan, and fresh basil.
