Picadillo
A savory and slightly sweet Latin American hash made with ground beef, potatoes, olives, and raisins, perfect for a comforting meal.
Ingredients
- 1½ lb ground beef
- 1 yellow onion
- 3 garlic cloves
- 1½ lb potatoes
- 1 bell pepper (optional)
- 14½ oz diced tomatoes
- 2 tbsp tomato paste
- ½ cup beef broth
- ½ cup green olives
- ¼ cup raisins
- 1 tbsp apple cider vinegar
- 1 tsp cumin
- ½ tsp oregano
- ¾ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 2 cup white rice (optional)
Steps
- Peel and dice potatoes into 1/2-inch cubes. Dice the onion and bell pepper (if using), and mince the garlic.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add diced onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, cumin, oregano, salt, and pepper, cooking for 1 minute more until fragrant.
- Stir in tomato paste, then add diced tomatoes, beef broth, and diced potatoes. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until potatoes are tender.
- Stir in green olives, raisins, and apple cider vinegar. Cook uncovered for another 5 minutes to allow flavors to meld and sauce to thicken slightly.
- Serve hot, optionally over white rice.
