Ingredients

  • 1½ lb ground beef
  • 1 yellow onion
  • 3 garlic cloves
  • 1½ lb potatoes
  • 1 bell pepper (optional)
  • 14½ oz diced tomatoes
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • ½ cup green olives
  • ¼ cup raisins
  • 1 tbsp apple cider vinegar
  • 1 tsp cumin
  • ½ tsp oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 2 cup white rice (optional)

Steps

  1. Peel and dice potatoes into 1/2-inch cubes. Dice the onion and bell pepper (if using), and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  3. Add diced onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, cumin, oregano, salt, and pepper, cooking for 1 minute more until fragrant.
  4. Stir in tomato paste, then add diced tomatoes, beef broth, and diced potatoes. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until potatoes are tender.
  5. Stir in green olives, raisins, and apple cider vinegar. Cook uncovered for another 5 minutes to allow flavors to meld and sauce to thicken slightly.
  6. Serve hot, optionally over white rice.
