Sausage and Sauerkraut with Potatoes

Ingredients

  • 1½ lb Smoked sausage
  • 28 oz Sauerkraut
  • 1½ lb Potatoes
  • 1 medium Onion
  • 1 medium Apple (optional)
  • ½ cup Chicken broth
  • 1 tbsp Vegetable oil
  • ½ tsp Caraway seeds (optional)
  • ¼ tsp Black pepper
  • ½ tsp Salt
  • 2 tbsp Fresh parsley (optional)

Steps

  1. Slice the smoked sausage into 1/2-inch thick rounds. Dice the potatoes into 1-inch cubes. Chop the onion. If using, core and dice the apple.
  2. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  3. Add the diced potatoes and chopped onion to the skillet. Cook, stirring occasionally, until potatoes start to brown and onions soften, about 8-10 minutes.
  4. Drain and rinse the sauerkraut. Add the sauerkraut, cooked sausage, chicken broth, salt, pepper, and caraway seeds (if using) to the skillet. If using, add the diced apple.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until potatoes are tender, stirring occasionally.
  6. Taste and adjust seasonings as needed. Garnish with fresh parsley, if desired, before serving.
