Sausage and Sauerkraut with Potatoes

Ingredients
- 1½ lb Smoked sausage
- 28 oz Sauerkraut
- 1½ lb Potatoes
- 1 medium Onion
- 1 medium Apple (optional)
- ½ cup Chicken broth
- 1 tbsp Vegetable oil
- ½ tsp Caraway seeds (optional)
- ¼ tsp Black pepper
- ½ tsp Salt
- 2 tbsp Fresh parsley (optional)
Steps
- Slice the smoked sausage into 1/2-inch thick rounds. Dice the potatoes into 1-inch cubes. Chop the onion. If using, core and dice the apple.
- Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
- Add the diced potatoes and chopped onion to the skillet. Cook, stirring occasionally, until potatoes start to brown and onions soften, about 8-10 minutes.
- Drain and rinse the sauerkraut. Add the sauerkraut, cooked sausage, chicken broth, salt, pepper, and caraway seeds (if using) to the skillet. If using, add the diced apple.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until potatoes are tender, stirring occasionally.
- Taste and adjust seasonings as needed. Garnish with fresh parsley, if desired, before serving.
