Spicy Korean Noodles

Ingredients

  • 4 packs ramen noodles
  • 1 lb chicken breast
  • 4 tbsp gochujang
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 4 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 4 green onions
  • 2 carrots
  • 5 oz spinach
  • 1 tbsp sesame seeds (optional)

Steps

  1. Slice chicken breast into thin strips. Mince garlic and grate ginger. Chop green onions and julienne carrots.
  2. In a bowl, whisk together gochujang, soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, and rice vinegar to create the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add carrots to the same skillet and stir-fry for 2-3 minutes until slightly tender. Add spinach and cook until wilted, about 1-2 minutes.
  5. Cook ramen noodles according to package directions. Drain well, discarding seasoning packets.
  6. Add cooked chicken and drained ramen noodles to the skillet with the vegetables. Pour the prepared sauce over everything and toss to coat evenly.
  7. Stir in chopped green onions. Cook for another 1-2 minutes until heated through.
  8. Serve immediately, garnished with optional sesame seeds.
