Tilapia with Mango Salsa
Flaky tilapia fillets are pan-seared to perfection and topped with a vibrant, fresh mango salsa for a light and flavorful meal.
Ingredients
- 1½ lb tilapia fillets
- 2 mangoes, ripe
- ¼ red onion
- ½ red bell pepper
- 1 jalapeño
- ¼ cup cilantro
- 1 lime
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp chili powder (optional)
Steps
- Dice the mangoes, red onion, and red bell pepper. Mince the jalapeño (remove seeds for less heat) and chop the cilantro.
- In a medium bowl, combine the diced mango, red onion, red bell pepper, minced jalapeño, and chopped cilantro. Squeeze the juice of one lime over the salsa and mix well. Set aside.
- Pat the tilapia fillets dry with paper towels. Season both sides of the fillets with salt, black pepper, and chili powder if using.
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Once the oil is shimmering, carefully place the tilapia fillets in the skillet. Cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
- Remove the cooked tilapia from the skillet and transfer to serving plates.
- Top each tilapia fillet generously with the fresh mango salsa and serve immediately.
