Turkey Curry

Ingredients

  • 1¼ lb ground turkey
  • 1 yellow onion
  • 3 garlic cloves
  • 1 inch fresh ginger
  • 14½ oz diced tomatoes
  • 13½ oz coconut milk
  • ½ cup chicken broth
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ¼ cup fresh cilantro (optional)
  • 2 cup cooked rice (optional)

Steps

  1. Finely chop the onion, mince the garlic, and grate the ginger.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it apart, until browned. Drain any excess fat and set turkey aside.
  3. Add chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
  4. Return the cooked turkey to the pot. Stir in curry powder, turmeric, cumin, coriander, salt, and pepper. Cook for 1-2 minutes, stirring constantly, until aromatic.
  5. Pour in the diced tomatoes (undrained), coconut milk, and chicken broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, allowing the flavors to meld.
  6. Taste and adjust seasonings as needed. Serve hot, optionally over cooked rice and garnished with fresh cilantro.
