Turkey Curry
A comforting and flavorful turkey curry with tender turkey pieces simmered in a rich, aromatic sauce, perfect for a satisfying meal.
Ingredients
- 1¼ lb ground turkey
- 1 yellow onion
- 3 garlic cloves
- 1 inch fresh ginger
- 14½ oz diced tomatoes
- 13½ oz coconut milk
- ½ cup chicken broth
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- ¼ cup fresh cilantro (optional)
- 2 cup cooked rice (optional)
Steps
- Finely chop the onion, mince the garlic, and grate the ginger.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it apart, until browned. Drain any excess fat and set turkey aside.
- Add chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
- Return the cooked turkey to the pot. Stir in curry powder, turmeric, cumin, coriander, salt, and pepper. Cook for 1-2 minutes, stirring constantly, until aromatic.
- Pour in the diced tomatoes (undrained), coconut milk, and chicken broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, allowing the flavors to meld.
- Taste and adjust seasonings as needed. Serve hot, optionally over cooked rice and garnished with fresh cilantro.
