Turkey Jambalaya
A hearty and flavorful one-pot meal featuring turkey sausage, rice, and a medley of vegetables, seasoned with classic Cajun spices.
Ingredients
- 12 oz turkey sausage
- 1 lb boneless skinless chicken thighs
- 1 yellow onion
- 2 celery stalks
- 1 green bell pepper
- 3 clove garlic
- 14½ oz canned diced tomatoes
- 4 cup chicken broth
- 1½ cup long-grain white rice
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 bay leaf
- 1 tbsp vegetable oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Dice the turkey sausage and chicken thighs into 1-inch pieces. Chop the onion, celery, and green bell pepper (the 'holy trinity'). Mince the garlic.
- Heat vegetable oil in a large Dutch oven or pot over medium-high heat. Brown the turkey sausage and chicken in batches, then remove and set aside.
- Add the onion, celery, and bell pepper to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic, Cajun seasoning, thyme, salt, and pepper, cooking for another minute until fragrant.
- Return the browned meats to the pot. Stir in the diced tomatoes, chicken broth, and bay leaf. Bring to a boil.
- Add the rice, stir once, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
- Remove from heat, let stand covered for 5 minutes, then fluff with a fork. Discard the bay leaf.
- Garnish with fresh parsley, if desired, and serve hot.
