Ingredients

  • 4 arepas
  • ½ cup mozzarella cheese
  • 1 lb shredded beef
  • 15 oz black beans
  • 2 ripe plantains
  • 1 tomato
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup pico de gallo (optional)
  • ¼ cup guacamole (optional)

Steps

  1. Prepare the shredded beef in a skillet, seasoning with salt and pepper to taste. Keep warm.
  2. Heat the black beans in a small saucepan over medium heat until warmed through.
  3. Fry or grill the ripe plantains until golden and tender, then slice them into bite-sized pieces.
  4. Finely dice the tomato for the pico de gallo or as a fresh topping.
  5. Preheat a grill or pan over medium-high heat. Grill the arepas for 3-5 minutes per side, or until golden brown and heated through.
  6. Carefully slice each arepa horizontally along one edge, creating a pocket.
  7. Fill each arepa with shredded beef, black beans, ripe plantains, and diced tomato.
  8. Serve immediately, optionally with pico de gallo or guacamole on the side.
