Barramundi with Moroccan Spices

Enjoy a whole roasted barramundi infused with aromatic Moroccan spices and zesty lemon, served with a fresh herb dressing.

Ingredients

  • 1.6 kg barramundi
  • 1 tsp cumin
  • 1 tsp cilantro
  • ½ tsp paprika
  • ½ tsp chili powder
  • 4 clove garlic
  • 2 lemon
  • 10 tbsp olive oil
  • 1 bunch fresh cilantro
  • 1 pinch salt
  • 2 cup couscous or rice (optional)

Steps

  1. Combine ground cumin, cilantro, paprika, chili powder, minced garlic, lemon juice, 5 tablespoons olive oil, and a pinch of salt in a food processor and blitz to form a dressing.
  2. Make three slashes on each side of the barramundi, then coat the fish with half of the dressing. Marinate for 30 minutes.
  3. Preheat oven to 220C (200C fan/Gas 7).
  4. Place the marinated fish on a roasting tray and cook in the preheated oven for 20 minutes, or until the flesh is firm and the eyes are white.
  5. While the fish roasts, finely chop the fresh cilantro and stir it into the remaining dressing.
  6. Serve the roasted barramundi immediately with the fresh dressing, alongside steamed couscous or rice if desired.
