Barramundi with Moroccan Spices
Enjoy a whole roasted barramundi infused with aromatic Moroccan spices and zesty lemon, served with a fresh herb dressing.
Ingredients
- 1.6 kg barramundi
- 1 tsp cumin
- 1 tsp cilantro
- ½ tsp paprika
- ½ tsp chili powder
- 4 clove garlic
- 2 lemon
- 10 tbsp olive oil
- 1 bunch fresh cilantro
- 1 pinch salt
- 2 cup couscous or rice (optional)
Steps
- Combine ground cumin, cilantro, paprika, chili powder, minced garlic, lemon juice, 5 tablespoons olive oil, and a pinch of salt in a food processor and blitz to form a dressing.
- Make three slashes on each side of the barramundi, then coat the fish with half of the dressing. Marinate for 30 minutes.
- Preheat oven to 220C (200C fan/Gas 7).
- Place the marinated fish on a roasting tray and cook in the preheated oven for 20 minutes, or until the flesh is firm and the eyes are white.
- While the fish roasts, finely chop the fresh cilantro and stir it into the remaining dressing.
- Serve the roasted barramundi immediately with the fresh dressing, alongside steamed couscous or rice if desired.
