Beef Mechado

A hearty Filipino beef stew featuring tender beef braised in a rich tomato sauce with potatoes and savory seasonings.

Ingredients

  • 2 lb beef
  • 3 clove garlic
  • 1 onion
  • 8 oz tomato paste
  • 1 cup water
  • 3 tbsp olive oil
  • 1 slice lemon
  • 1 large potatoes
  • ¼ cup soy sauce
  • ½ tsp black pepper
  • 2 bay leaves
  • 1 pinch salt (optional)

Steps

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Sauté garlic and onion until fragrant.
  2. Add beef to the pot and brown on all sides.
  3. Pour in tomato paste, water, soy sauce, black pepper, and bay leaves. Bring to a simmer.
  4. Cover and cook on low heat for 60-75 minutes, or until the beef is tender.
  5. Add potatoes and lemon slice. Continue to simmer until potatoes are cooked through, about 15-20 minutes.
  6. Season with salt to taste. Serve hot with rice.
