Beef Mechado
A hearty Filipino beef stew featuring tender beef braised in a rich tomato sauce with potatoes and savory seasonings.
Ingredients
- 2 lb beef
- 3 clove garlic
- 1 onion
- 8 oz tomato paste
- 1 cup water
- 3 tbsp olive oil
- 1 slice lemon
- 1 large potatoes
- ¼ cup soy sauce
- ½ tsp black pepper
- 2 bay leaves
- 1 pinch salt (optional)
Steps
- Heat olive oil in a large pot or Dutch oven over medium heat. Sauté garlic and onion until fragrant.
- Add beef to the pot and brown on all sides.
- Pour in tomato paste, water, soy sauce, black pepper, and bay leaves. Bring to a simmer.
- Cover and cook on low heat for 60-75 minutes, or until the beef is tender.
- Add potatoes and lemon slice. Continue to simmer until potatoes are cooked through, about 15-20 minutes.
- Season with salt to taste. Serve hot with rice.
