Ingredients

  • 2 eggplant
  • 2 cup breadcrumbs
  • ¼ cup sesame seeds
  • 4 eggs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cup vegetable oil

Steps

  1. Slice eggplant into 1 cm thick rounds. Place in a bowl, sprinkle with salt, and let sit for 30 minutes to draw out moisture.
  2. Rinse eggplant slices and pat them thoroughly dry with a kitchen towel.
  3. In one shallow dish, combine breadcrumbs and sesame seeds. In another, beat eggs with a pinch of salt and pepper.
  4. Heat vegetable oil in a large skillet over high heat.
  5. Dip each eggplant slice first in the beaten egg, then coat completely with the breadcrumb mixture.
  6. Fry eggplant slices for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels before serving.
