Beef Stroganoff

A classic Russian comfort food featuring tender beef and mushrooms in a rich, creamy sauce, perfect over noodles or rice.

Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 1 clove garlic
  • 1 tbsp butter
  • 250 g mushrooms
  • 500 g beef fillet
  • 1 tbsp all-purpose flour
  • 150 g crème fraîche
  • 1 tbsp English mustard
  • 100 ml beef broth
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tbsp parsley (optional)

Steps

  1. Heat olive oil in a non-stick frying pan, then add sliced onion and cook over medium heat for 15 minutes until softened. Add garlic and cook for 2-3 minutes more.
  2. Add butter and mushrooms to the pan. Cook for about 5 minutes until mushrooms are softened. Season well, then transfer the onion and mushroom mixture to a plate.
  3. Toss beef fillet pieces in a bowl with all-purpose flour, salt, and pepper until coated.
  4. Add beef to the same pan (add a little more oil if needed) and fry for 3-4 minutes until well colored.
  5. Return the cooked onions and mushrooms to the pan with the beef.
  6. Whisk together crème fraîche, English mustard, and beef broth, then pour into the pan.
  7. Cook over medium heat for about 5 minutes, allowing the sauce to thicken.
  8. Garnish with fresh parsley and serve immediately with pappardelle or rice.
