Beef Stroganoff
A classic Russian comfort food featuring tender beef and mushrooms in a rich, creamy sauce, perfect over noodles or rice.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 1 clove garlic
- 1 tbsp butter
- 250 g mushrooms
- 500 g beef fillet
- 1 tbsp all-purpose flour
- 150 g crème fraîche
- 1 tbsp English mustard
- 100 ml beef broth
- 1 pinch salt
- 1 pinch black pepper
- 2 tbsp parsley (optional)
Steps
- Heat olive oil in a non-stick frying pan, then add sliced onion and cook over medium heat for 15 minutes until softened. Add garlic and cook for 2-3 minutes more.
- Add butter and mushrooms to the pan. Cook for about 5 minutes until mushrooms are softened. Season well, then transfer the onion and mushroom mixture to a plate.
- Toss beef fillet pieces in a bowl with all-purpose flour, salt, and pepper until coated.
- Add beef to the same pan (add a little more oil if needed) and fry for 3-4 minutes until well colored.
- Return the cooked onions and mushrooms to the pan with the beef.
- Whisk together crème fraîche, English mustard, and beef broth, then pour into the pan.
- Cook over medium heat for about 5 minutes, allowing the sauce to thicken.
- Garnish with fresh parsley and serve immediately with pappardelle or rice.
