Olivier Salad (Russian Potato Salad)
A classic Russian potato salad, featuring a delightful mix of boiled vegetables, eggs, sausage, and a creamy mayonnaise dressing.
Ingredients
- 1½ lb potatoes
- 3 carrots
- 1 tbsp salt
- ½ tbsp white wine vinegar
- 4 large eggs
- 7 oz sausage
- ¼ cup dill
- 15 oz canned peas
- 4 green onions
- 1 cup mayonnaise
- ½ tsp black pepper (optional)
Steps
- Peel and dice potatoes and carrots into small, uniform cubes. Place them in a large pot, cover with water, and add salt and white wine vinegar.
- Bring to a boil, then reduce heat and simmer for about 15 minutes, or until potatoes are tender. Drain and let cool completely.
- Meanwhile, hard-boil the eggs, then peel and dice them. Dice the sausage into small cubes. Chop the dill and green onions.
- In a large bowl, combine the cooled potatoes and carrots, diced eggs, sausage, drained peas, and chopped green onions.
- Add mayonnaise and chopped dill to the bowl. Mix gently until all ingredients are well combined.
- Season with additional salt and pepper to taste. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
