Olivier Salad (Russian Potato Salad)

Ingredients

  • 1½ lb potatoes
  • 3 carrots
  • 1 tbsp salt
  • ½ tbsp white wine vinegar
  • 4 large eggs
  • 7 oz sausage
  • ¼ cup dill
  • 15 oz canned peas
  • 4 green onions
  • 1 cup mayonnaise
  • ½ tsp black pepper (optional)

Steps

  1. Peel and dice potatoes and carrots into small, uniform cubes. Place them in a large pot, cover with water, and add salt and white wine vinegar.
  2. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until potatoes are tender. Drain and let cool completely.
  3. Meanwhile, hard-boil the eggs, then peel and dice them. Dice the sausage into small cubes. Chop the dill and green onions.
  4. In a large bowl, combine the cooled potatoes and carrots, diced eggs, sausage, drained peas, and chopped green onions.
  5. Add mayonnaise and chopped dill to the bowl. Mix gently until all ingredients are well combined.
  6. Season with additional salt and pepper to taste. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
