Bengali Chicken Curry with Potatoes

Ingredients
- 2 tbsp olive oil
- 2 onion
- 1 tbsp ginger-garlic paste
- 2 tomato
- 1 tsp cayenne pepper
- 1 tsp curry powder
- 1 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1½ lb chicken breast
- 2 red potato
- ½ cup cilantro
Steps
- Heat olive oil in a large skillet over medium-high heat. Add diced onions and cook until translucent, about 5 minutes.
- Stir in ginger-garlic paste and cook for another 5 minutes.
- Reduce heat to medium, add diced tomatoes, and cook until pulpy, 5-10 minutes.
- Stir in cayenne pepper, curry powder, garam masala, turmeric, and cumin; cook for 5 more minutes.
- Add chicken and potatoes to the skillet. Simmer, stirring occasionally, for 20 minutes, until potatoes are tender and chicken is cooked through.
- Stir in cilantro and continue to simmer for another 10 minutes. Serve hot.
