Boxty Breakfast

Ingredients

  • 4 potatoes
  • 1 bunch green onions
  • 0.22 lb all-purpose flour
  • 1 egg white
  • 0.63 cup milk
  • 1 tsp baking soda
  • 3 tbsp butter
  • 2 tbsp vegetable oil
  • 6 cherry tomatoes
  • 12 slice bacon
  • 6 eggs

Steps

  1. Peel and grate 2 potatoes, squeezing out excess liquid. Cut the remaining 2 potatoes into chunks and boil until tender, then mash. Combine grated and mashed potatoes with green onions and flour.
  2. Whisk egg white until soft peaks form. Fold in milk and baking soda, then gently fold into the potato mixture.
  3. Heat a large non-stick frying pan with 1 tbsp butter and some oil over medium heat. Drop spoonfuls of potato mixture to form 3-4 boxty pancakes, cooking 3-5 minutes per side until golden. Keep warm in a low oven while cooking remaining batches, adding more butter and oil as needed.
  4. Heat a grill to medium. In a heavy-based pan, fry cherry tomatoes with a knob of butter and a little oil for about 5 minutes until softened.
  5. Grill the bacon until crispy. Fry the eggs to your liking.
  6. Serve the boxty, bacon, and fried eggs, with the softened cherry tomatoes on the side.
