Mustard Champ

A classic Irish side dish featuring creamy mashed potatoes infused with mustard and vibrant green onions.

Ingredients

  • 1⅛ lb potatoes
  • ½ cup milk
  • 2½ tbsp butter
  • 2 tbsp whole grain mustard
  • 1 bunch green onions
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Boil potatoes in salted water for 15-20 minutes until very tender. Drain thoroughly and mash until smooth.
  2. In a small saucepan, gently heat milk and half the butter until warm. Stir in the mustard.
  3. Pour the warm milk mixture into the mashed potatoes and beat until creamy. Season with salt and pepper.
  4. In the same saucepan, melt the remaining butter. Add sliced green onions and fry for 2 minutes until just soft and bright green.
  5. Fold the fried green onions into the mashed potatoes and serve immediately.
