Mustard Champ
A classic Irish side dish featuring creamy mashed potatoes infused with mustard and vibrant green onions.
Ingredients
- 1⅛ lb potatoes
- ½ cup milk
- 2½ tbsp butter
- 2 tbsp whole grain mustard
- 1 bunch green onions
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Boil potatoes in salted water for 15-20 minutes until very tender. Drain thoroughly and mash until smooth.
- In a small saucepan, gently heat milk and half the butter until warm. Stir in the mustard.
- Pour the warm milk mixture into the mashed potatoes and beat until creamy. Season with salt and pepper.
- In the same saucepan, melt the remaining butter. Add sliced green onions and fry for 2 minutes until just soft and bright green.
- Fold the fried green onions into the mashed potatoes and serve immediately.
