Chicken Chow Mein

Ingredients

  • 1¼ lb boneless, skinless chicken breast
  • 12 oz chow mein noodles
  • ½ cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 3 clove garlic
  • 1 tbsp ginger
  • 2 stalk celery
  • 2 carrots
  • 3 cup cabbage
  • 4 green onions (optional)
  • 2 tbsp vegetable oil
  • 1 tsp sugar
  • ½ tsp black pepper

Steps

  1. Cook chow mein noodles according to package directions, then drain and set aside.
  2. Cut chicken into thin strips. In a bowl, whisk together 1/4 cup soy sauce, oyster sauce, sesame oil, and cornstarch. Add chicken and toss to coat.
  3. Mince garlic and ginger. Slice celery and carrots into thin matchsticks. Shred cabbage.
  4. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  5. Add remaining 1 tablespoon vegetable oil to the skillet. Add garlic, ginger, celery, and carrots; stir-fry for 3-4 minutes until slightly tender-crisp. Add cabbage and cook for another 2-3 minutes until wilted.
  6. Return chicken to the skillet with the vegetables. Add cooked noodles, remaining 1/4 cup soy sauce, sugar, and black pepper. Toss everything together until well combined and heated through.
  7. Garnish with sliced green onions, if desired, and serve immediately.
