Ingredients

  • 1 lb chicken liver
  • ½ lb bacon
  • 1 clove garlic
  • 1 onion
  • 2 tsp ground mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup milk
  • 1 tbsp sherry
  • 2 tbsp melted butter (optional)

Steps

  1. Preheat oven to 3000F (1500C). Clean chicken livers, removing any sinews and gall.
  2. Roughly chop bacon, garlic, and onion.
  3. Combine chicken livers, chopped bacon, garlic, onion, ground mustard, salt, and pepper in an oven-safe casserole dish.
  4. Pour milk over the ingredients, ensuring they are mostly covered. Cover the casserole dish with a lid.
  5. Bake for 2 hours in the preheated oven.
  6. Carefully transfer the cooked mixture to a blender or food processor and liquidize until smooth.
  7. Taste and adjust seasoning as needed. Stir in the sherry.
  8. Transfer the pate to a serving dish, cover with melted butter if desired, and chill before serving.
