Chicken Liver Pate
A rich and savory chicken liver pate, slow-cooked with bacon, onion, and garlic, then blended to a smooth, spreadable consistency.
Ingredients
- 1 lb chicken liver
- ½ lb bacon
- 1 clove garlic
- 1 onion
- 2 tsp ground mustard
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup milk
- 1 tbsp sherry
- 2 tbsp melted butter (optional)
Steps
- Preheat oven to 3000F (1500C). Clean chicken livers, removing any sinews and gall.
- Roughly chop bacon, garlic, and onion.
- Combine chicken livers, chopped bacon, garlic, onion, ground mustard, salt, and pepper in an oven-safe casserole dish.
- Pour milk over the ingredients, ensuring they are mostly covered. Cover the casserole dish with a lid.
- Bake for 2 hours in the preheated oven.
- Carefully transfer the cooked mixture to a blender or food processor and liquidize until smooth.
- Taste and adjust seasoning as needed. Stir in the sherry.
- Transfer the pate to a serving dish, cover with melted butter if desired, and chill before serving.
