Chicken Marengo

A classic French chicken stew with mushrooms, tomatoes, and olives, simmered until tender and served with fresh parsley.

Ingredients

  • 1 tbsp olive oil
  • 300 g mushrooms
  • 4 chicken legs
  • 500 g tomato sauce
  • 1 chicken bouillon cube
  • 100 g black olives
  • ¼ cup fresh parsley (optional)
  • ½ tsp black pepper (optional)

Steps

  1. Heat olive oil in a large flameproof casserole dish over medium heat.
  2. Add mushrooms and stir-fry until softened, about 5-7 minutes.
  3. Add chicken legs to the dish and cook briefly on each side to brown them slightly.
  4. Pour in the tomato sauce, crumble in the chicken bouillon cube, and stir in the black olives.
  5. Season with black pepper. Cover the casserole dish and simmer for 40 minutes, or until the chicken is tender.
  6. Sprinkle with fresh chopped parsley before serving.
