Chicken Marengo
A classic French chicken stew with mushrooms, tomatoes, and olives, simmered until tender and served with fresh parsley.
Ingredients
- 1 tbsp olive oil
- 300 g mushrooms
- 4 chicken legs
- 500 g tomato sauce
- 1 chicken bouillon cube
- 100 g black olives
- ¼ cup fresh parsley (optional)
- ½ tsp black pepper (optional)
Steps
- Heat olive oil in a large flameproof casserole dish over medium heat.
- Add mushrooms and stir-fry until softened, about 5-7 minutes.
- Add chicken legs to the dish and cook briefly on each side to brown them slightly.
- Pour in the tomato sauce, crumble in the chicken bouillon cube, and stir in the black olives.
- Season with black pepper. Cover the casserole dish and simmer for 40 minutes, or until the chicken is tender.
- Sprinkle with fresh chopped parsley before serving.
