Chicken Lo Mein

Ingredients

  • 1¼ lb boneless, skinless chicken breast
  • 16 oz lo mein noodles
  • ½ cup soy sauce
  • ¼ cup oyster sauce
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp ginger, grated
  • 2 clove garlic, minced
  • 1 cup carrots, julienned
  • 1 cup celery, sliced
  • 1 bell pepper, sliced
  • ½ cup green onions, sliced (optional)
  • 2 tbsp vegetable oil

Steps

  1. Cook lo mein noodles according to package directions, then drain and rinse with cold water to prevent sticking.
  2. Slice chicken into thin strips. In a bowl, whisk together soy sauce, oyster sauce, sesame oil, and cornstarch to create the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add grated ginger, minced garlic, julienned carrots, sliced celery, and sliced bell pepper to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Return cooked chicken to the skillet with the vegetables. Add the drained lo mein noodles.
  6. Pour the prepared sauce over the chicken, vegetables, and noodles. Toss everything together until well coated and heated through, about 2-3 minutes.
  7. Garnish with sliced green onions, if desired, and serve hot.
