Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ cup cornstarch
  • 1 egg
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger, grated
  • 2 clove garlic, minced
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp sesame seeds
  • 2 scallions, sliced (optional)
  • 2 cup vegetable oil

Steps

  1. Cut chicken into 1-inch pieces. In a bowl, whisk egg, then toss chicken to coat. In another bowl, dredge chicken in cornstarch until fully coated.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Fry chicken in batches until golden brown and cooked through, about 3-5 minutes per batch. Remove and drain on a paper towel-lined plate.
  3. In a separate small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes (if using).
  4. Drain all but 1 tablespoon of oil from the skillet. Pour the sauce into the skillet and bring to a simmer, stirring constantly until slightly thickened.
  5. Add the fried chicken back to the skillet and toss to coat evenly with the sauce.
  6. Sprinkle with sesame seeds and sliced scallions (if using). Serve immediately, perhaps with steamed rice.
