Crispy Chow Mein
Enjoy classic crispy chow mein with tender chicken and a medley of fresh vegetables in a savory sauce.
Ingredients
- 16 oz chow mein noodles (crispy style)
- 1¼ lb boneless, skinless chicken breast
- ½ cup soy sauce
- ¼ cup oyster sauce
- 2 tsp sesame oil
- 1 tbsp cornstarch
- 3 clove garlic
- 1 tbsp ginger
- 1 yellow onion
- 2 celery stalks
- 2 carrots
- 3 cup napa cabbage
- 1 cup bean sprouts (optional)
- 2 green onions (optional)
- ½ cup vegetable oil
- 1 tsp sugar
- ½ tsp white pepper
Steps
- Prepare the sauce by whisking together soy sauce, oyster sauce, sesame oil, cornstarch, sugar, and white pepper in a small bowl. Set aside.
- Slice chicken breast into thin strips. Mince garlic and ginger. Thinly slice onion, celery, and carrots. Shred napa cabbage.
- Heat 1/4 cup vegetable oil in a large skillet or wok over medium-high heat. Add the chow mein noodles in a single layer and cook until golden brown and crispy on both sides, about 3-5 minutes per side. Remove and set aside.
- Add another 2 tablespoons of vegetable oil to the skillet. Add chicken strips and stir-fry until cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add remaining vegetable oil to the skillet. Add garlic, ginger, onion, celery, and carrots. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Return chicken to the skillet. Add napa cabbage and bean sprouts (if using). Stir-fry for 2 minutes. Pour in the prepared sauce and cook, stirring constantly, until the sauce thickens and coats the ingredients.
- Serve the chicken and vegetable mixture over the crispy chow mein noodles. Garnish with chopped green onions if desired.
