Ingredients

  • 1 lb wide rice noodles
  • 1 lb shrimp
  • 1 egg
  • ¼ tsp white pepper
  • 3 tsp sesame oil
  • 3 tbs cornstarch
  • 5 tbs vegetable oil
  • 2 tsp garlic
  • 2 tsp ginger
  • 1 cup onion
  • 2 cup bean sprouts
  • 1 cup scallions
  • 2 tbs Shaoxing wine
  • 2 tbs oyster sauce
  • 1 tbs sugar
  • 1 tbs rice vinegar
  • 2 tbs soy sauce
  • 4 tbs water

Steps

  1. Soak rice noodles in hot water for 15-20 minutes until pliable, then drain and rinse with cold water.
  2. In a bowl, combine shrimp with egg, 0.25 tsp white pepper, 1 tsp sesame oil, 1 tbs cornstarch, and 1 tbs vegetable oil; mix well.
  3. Heat 2 tbs vegetable oil in a wok or large skillet over high heat. Stir-fry marinated shrimp until golden brown, then remove and set aside.

  6. Return the cooked shrimp to the wok. In a small bowl, whisk 2 tbs cornstarch with 4 tbs water, then slowly add to the stir-fry, tossing until the sauce thickens to your desired consistency.
  7. Serve immediately and enjoy your homemade Shrimp Chow Fun.
