Shrimp Chow Fun
A classic Chinese stir-fry featuring tender shrimp and wide rice noodles with crisp vegetables in a savory sauce.
Ingredients
- 1 lb wide rice noodles
- 1 lb shrimp
- 1 egg
- ¼ tsp white pepper
- 3 tsp sesame oil
- 3 tbs cornstarch
- 5 tbs vegetable oil
- 2 tsp garlic
- 2 tsp ginger
- 1 cup onion
- 2 cup bean sprouts
- 1 cup scallions
- 2 tbs Shaoxing wine
- 2 tbs oyster sauce
- 1 tbs sugar
- 1 tbs rice vinegar
- 2 tbs soy sauce
- 4 tbs water
Steps
- Soak rice noodles in hot water for 15-20 minutes until pliable, then drain and rinse with cold water.
- In a bowl, combine shrimp with egg, 0.25 tsp white pepper, 1 tsp sesame oil, 1 tbs cornstarch, and 1 tbs vegetable oil; mix well.
- Heat 2 tbs vegetable oil in a wok or large skillet over high heat. Stir-fry marinated shrimp until golden brown, then remove and set aside.
- Add 2 tbs vegetable oil to the wok. Add minced garlic, ginger, onion, bean sprouts, and scallions; stir-fry for 2-3 minutes until fragrant and slightly tender.
- Add the soaked noodles to the wok. Pour in Shaoxing wine, oyster sauce, sugar, rice vinegar, 2 tsp sesame oil, 0.25 tsp white pepper, and soy sauce; toss to combine.
- Return the cooked shrimp to the wok. In a small bowl, whisk 2 tbs cornstarch with 4 tbs water, then slowly add to the stir-fry, tossing until the sauce thickens to your desired consistency.
