Ingredients

  • 30 oz canned chickpeas
  • ½ cup fresh parsley
  • ½ red onion
  • 2 garlic cloves
  • 2 tbsp all-purpose flour
  • 1 tsp cumin
  • ½ tsp cilantro
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup vegetable oil
  • 4 pita bread (optional)
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 4 cups mixed greens
  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp water

Steps

  1. Drain and rinse chickpeas. In a food processor, combine chickpeas, parsley, half of the red onion, garlic, flour, cumin, cilantro, salt, and pepper. Pulse until well combined but still slightly chunky.
  2. Form the falafel mixture into 12 small patties.
  3. Heat vegetable oil in a large skillet over medium-high heat. Fry falafel patties for 3-4 minutes per side, until golden brown and crispy. Drain on a paper towel-lined plate.
  4. Prepare the tahini dressing by whisking together tahini, lemon juice, and water until smooth. Add more water if needed to reach desired consistency.
  5. Assemble bowls with mixed greens, sliced cucumber, cherry tomatoes, and remaining red onion.
  6. Top each bowl with 3 falafel patties and drizzle generously with tahini dressing. Serve immediately, with pita bread if desired.
