Ingredients

  • 12 pieces Falafel
  • 1 head Romaine lettuce
  • 1 Cucumber
  • 1 pint Cherry tomatoes
  • ½ Red onion
  • 1 Lemon
  • ½ cup Tahini
  • ¼ cup Water
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ¼ cup Fresh parsley (optional)

Steps

  1. Prepare falafel according to package instructions (bake or pan-fry until crispy).
  2. Wash and chop romaine lettuce. Dice cucumber and halve cherry tomatoes. Thinly slice the red onion.
  3. For the tahini dressing, mince garlic. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, salt, and pepper until smooth. Add more water if needed to reach desired consistency.
  4. In a large bowl, combine lettuce, cucumber, tomatoes, and red onion. Drizzle with olive oil and toss gently.
  5. Top the salad with the cooked falafel.
  6. Drizzle generously with the tahini dressing. Garnish with fresh parsley if desired and serve immediately.
