Falafel Salad
A fresh and satisfying salad featuring crispy falafel, crisp vegetables, and a creamy tahini dressing.
Ingredients
- 12 pieces Falafel
- 1 head Romaine lettuce
- 1 Cucumber
- 1 pint Cherry tomatoes
- ½ Red onion
- 1 Lemon
- ½ cup Tahini
- ¼ cup Water
- 2 cloves Garlic
- 2 tbsp Olive oil
- ½ tsp Salt
- ¼ tsp Black pepper
- ¼ cup Fresh parsley (optional)
Steps
- Prepare falafel according to package instructions (bake or pan-fry until crispy).
- Wash and chop romaine lettuce. Dice cucumber and halve cherry tomatoes. Thinly slice the red onion.
- For the tahini dressing, mince garlic. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, salt, and pepper until smooth. Add more water if needed to reach desired consistency.
- In a large bowl, combine lettuce, cucumber, tomatoes, and red onion. Drizzle with olive oil and toss gently.
- Top the salad with the cooked falafel.
- Drizzle generously with the tahini dressing. Garnish with fresh parsley if desired and serve immediately.
