Ingredients

  • 1 lb fettuccine
  • ½ cup heavy cream
  • ½ cup unsalted butter
  • ½ cup Parmesan cheese
  • 2 tbsp fresh parsley (optional)
  • ½ tsp black pepper
  • 1 tsp salt

Steps

  1. Cook fettuccine according to package directions in a large pot of salted boiling water until al dente. Drain, reserving 1/2 cup of pasta water.
  2. While pasta cooks, melt butter and heavy cream in a large skillet or pot over medium heat, stirring until butter is fully incorporated and cream gently bubbles.
  3. Whisk in grated Parmesan cheese, salt, and black pepper until the sauce is smooth and slightly thickened.
  4. Add the drained fettuccine to the sauce and toss gently to coat. If the sauce is too thick, add a splash of reserved pasta water.
  5. Serve immediately, garnished with fresh parsley if desired.
