Ingredients

  • 24 oz potato gnocchi
  • ¾ cup basil pesto
  • ¼ cup Parmesan cheese (optional)
  • 1 cup cherry tomatoes (optional)
  • ¼ cup fresh basil leaves (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the gnocchi to the boiling water and cook according to package directions, usually 2-4 minutes, until they float to the surface.
  3. While gnocchi cooks, warm the pesto gently in a large skillet over low heat, if desired, or use at room temperature.
  4. Drain the cooked gnocchi and add directly to the skillet with the pesto, or to a large mixing bowl.
  5. Toss the gnocchi with the pesto until evenly coated.
  6. Serve immediately, garnished with grated Parmesan cheese, halved cherry tomatoes, and fresh basil leaves, if using.
