Gnocchi with Pesto
A simple yet satisfying Italian dish featuring soft potato gnocchi tossed in vibrant basil pesto.
Ingredients
- 24 oz potato gnocchi
- ¾ cup basil pesto
- ¼ cup Parmesan cheese (optional)
- 1 cup cherry tomatoes (optional)
- ¼ cup fresh basil leaves (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Bring a large pot of salted water to a rolling boil.
- Add the gnocchi to the boiling water and cook according to package directions, usually 2-4 minutes, until they float to the surface.
- While gnocchi cooks, warm the pesto gently in a large skillet over low heat, if desired, or use at room temperature.
- Drain the cooked gnocchi and add directly to the skillet with the pesto, or to a large mixing bowl.
- Toss the gnocchi with the pesto until evenly coated.
