Greek Chicken Bowl
A fresh and flavorful Greek chicken bowl featuring tender chicken, crisp vegetables, and a creamy tzatziki sauce.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cucumber
- 2 roma tomatoes
- ½ red onion
- 4 cup romaine lettuce
- ½ cup feta cheese, crumbled
- ¼ cup kalamata olives (optional)
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped (optional)
- 1 tbsp fresh parsley, chopped (optional)
Steps
- Dice chicken breasts into 1-inch pieces. In a bowl, toss chicken with 1 tablespoon olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate for at least 10 minutes.
- While chicken marinates, prepare the tzatziki: In a small bowl, combine Greek yogurt, minced garlic, and optional fresh dill or parsley. Season with a pinch of salt and pepper. Stir well and set aside.
- Dice cucumber, tomatoes, and red onion. Roughly chop romaine lettuce.
- Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes, or until cooked through and lightly browned.
- Assemble the bowls: Divide chopped romaine lettuce among 4 bowls. Top with cooked chicken, diced cucumber, tomatoes, and red onion.
- Garnish each bowl with crumbled feta cheese and optional kalamata olives. Drizzle generously with tzatziki sauce before serving.
