Hummus Bowls with Chicken

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ¾ tsp salt
- ¼ tsp black pepper
- 16 oz hummus
- 1 cucumber
- 1 pint cherry tomatoes
- ½ red onion
- ¼ cup fresh parsley (optional)
- 1 lemon (optional)
- 1½ cup couscous
- 1½ cup water or chicken broth
Steps
- Pat chicken dry and cut into 1-inch pieces. Toss with 1 tablespoon olive oil, paprika, cumin, garlic powder, salt, and pepper.
- Cook couscous according to package directions using water or broth. Fluff with a fork.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, or until browned and cooked through.
- While chicken cooks, dice cucumber, halve cherry tomatoes, and thinly slice red onion.
- Divide couscous among four bowls. Spoon a generous amount of hummus into each bowl.
- Top couscous and hummus with cooked chicken, diced cucumber, cherry tomatoes, and red onion.
- Garnish with fresh parsley and a squeeze of lemon juice, if desired, before serving.
