Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 16 oz hummus
  • 1 cucumber
  • 1 pint cherry tomatoes
  • ½ red onion
  • ¼ cup fresh parsley (optional)
  • 1 lemon (optional)
  • 1½ cup couscous
  • 1½ cup water or chicken broth

Steps

  1. Pat chicken dry and cut into 1-inch pieces. Toss with 1 tablespoon olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Cook couscous according to package directions using water or broth. Fluff with a fork.
  3. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, or until browned and cooked through.
  4. While chicken cooks, dice cucumber, halve cherry tomatoes, and thinly slice red onion.
  5. Divide couscous among four bowls. Spoon a generous amount of hummus into each bowl.
  6. Top couscous and hummus with cooked chicken, diced cucumber, cherry tomatoes, and red onion.
  7. Garnish with fresh parsley and a squeeze of lemon juice, if desired, before serving.
