Haluski with Sausage
A comforting and hearty Polish-American dish featuring tender egg noodles and sautéed cabbage, elevated with savory smoked sausage.
Ingredients
- 14 oz smoked kielbasa sausage
- 12 oz egg noodles
- 1½ lb green cabbage
- 1 yellow onion
- 4 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Bring a large pot of salted water to a boil and cook egg noodles according to package directions until al dente; drain and set aside.
- While noodles cook, slice the kielbasa into 1/2-inch thick rounds, halve and thinly slice the cabbage, and dice the onion.
- In a large skillet or Dutch oven, melt 2 tablespoons of butter over medium heat and add the sliced kielbasa; cook until lightly browned, then remove and set aside.
- Add the remaining 2 tablespoons of butter to the same skillet, then add the diced onion and cook until softened, about 5 minutes.
- Add the sliced cabbage to the skillet with the onions, season with salt and pepper, and cook, stirring occasionally, until the cabbage is tender and slightly caramelized, about 15-20 minutes.
- Return the cooked kielbasa to the skillet with the cabbage and onions, then add the drained egg noodles.
- Toss everything together until well combined and heated through, adjusting seasonings as needed.
- Serve warm as a comforting main dish.
