Haluski with Sausage

Ingredients

  • 14 oz smoked kielbasa sausage
  • 12 oz egg noodles
  • 1½ lb green cabbage
  • 1 yellow onion
  • 4 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Bring a large pot of salted water to a boil and cook egg noodles according to package directions until al dente; drain and set aside.
  2. While noodles cook, slice the kielbasa into 1/2-inch thick rounds, halve and thinly slice the cabbage, and dice the onion.
  3. In a large skillet or Dutch oven, melt 2 tablespoons of butter over medium heat and add the sliced kielbasa; cook until lightly browned, then remove and set aside.
  4. Add the remaining 2 tablespoons of butter to the same skillet, then add the diced onion and cook until softened, about 5 minutes.
  5. Add the sliced cabbage to the skillet with the onions, season with salt and pepper, and cook, stirring occasionally, until the cabbage is tender and slightly caramelized, about 15-20 minutes.
  6. Return the cooked kielbasa to the skillet with the cabbage and onions, then add the drained egg noodles.
  7. Toss everything together until well combined and heated through, adjusting seasonings as needed.
  8. Serve warm as a comforting main dish.
