Homemade Sushi Rolls

Ingredients

  • 1½ cup sushi rice
  • ¼ cup rice wine vinegar
  • 2 tbsp granulated sugar
  • 3 tbsp Japanese mayonnaise
  • 1 tbsp soy sauce (optional)
  • 1 cucumber
  • 4 nori sheets
  • ½ can tuna (optional)
  • 4 oz smoked salmon (optional)
  • 4 oz shrimp (optional)

Steps

  1. Prepare sushi rice according to package directions. Once cooked, mix in rice wine vinegar and sugar.
  2. Lay a nori sheet, shiny-side down, on a sushi rolling mat. Dip hands in vinegared water and pat a thin layer of rice over the nori, leaving a clear strip at the far edge.
  3. Spread a thin line of Japanese mayonnaise down the middle of the rice, then add your chosen fillings like cucumber, tuna, or smoked salmon.
  4. Lift the edge of the mat and roll tightly, applying gentle pressure. Moisten the clear edge of the nori with a little water to seal the roll.
  5. Wrap the sushi roll tightly in cling film. Let it rest for a few minutes to set.
  6. Unwrap the cling film and, using a sharp, damp knife, slice the roll into thick pieces.
  7. Serve immediately with soy sauce if desired.
