Teriyaki Salmon Bowl

A flavorful and satisfying bowl featuring perfectly cooked teriyaki salmon, fluffy rice, and a medley of fresh vegetables.

Ingredients

  • 1½ lb salmon fillets
  • ½ cup soy sauce
  • ¼ cup mirin
  • ¼ cup sake
  • 2 tbsp sugar
  • 1 tbsp ginger
  • 1 clove garlic
  • 1 tsp sesame oil
  • 2 cup rice
  • 2 cup broccoli florets
  • 2 medium carrots
  • 1 tbsp sesame seeds (optional)
  • 2 stalks green onions (optional)

Steps

  1. Preheat oven to 400 F (200 C). In a small saucepan, combine soy sauce, mirin, sake, sugar, grated ginger, minced garlic, and sesame oil. Bring to a simmer over medium heat, then reduce heat and cook until slightly thickened, about 5-7 minutes.
  2. Place salmon fillets on a baking sheet lined with parchment paper. Brush generously with about half of the teriyaki sauce.
  3. Bake salmon for 12-15 minutes, or until cooked through and flaky. While salmon bakes, cook rice according to package directions.
  4. Steam or blanch broccoli and slice carrots into thin strips.
  5. Once salmon is cooked, brush with more teriyaki sauce.
  6. Assemble bowls with cooked rice, salmon, broccoli, and carrots. Drizzle with remaining teriyaki sauce.
  7. Garnish with sesame seeds and sliced green onions, if desired, and serve immediately.
