Teriyaki Salmon Bowl
A flavorful and satisfying bowl featuring perfectly cooked teriyaki salmon, fluffy rice, and a medley of fresh vegetables.
Ingredients
- 1½ lb salmon fillets
- ½ cup soy sauce
- ¼ cup mirin
- ¼ cup sake
- 2 tbsp sugar
- 1 tbsp ginger
- 1 clove garlic
- 1 tsp sesame oil
- 2 cup rice
- 2 cup broccoli florets
- 2 medium carrots
- 1 tbsp sesame seeds (optional)
- 2 stalks green onions (optional)
Steps
- Preheat oven to 400 F (200 C). In a small saucepan, combine soy sauce, mirin, sake, sugar, grated ginger, minced garlic, and sesame oil. Bring to a simmer over medium heat, then reduce heat and cook until slightly thickened, about 5-7 minutes.
- Place salmon fillets on a baking sheet lined with parchment paper. Brush generously with about half of the teriyaki sauce.
- Bake salmon for 12-15 minutes, or until cooked through and flaky. While salmon bakes, cook rice according to package directions.
- Steam or blanch broccoli and slice carrots into thin strips.
- Once salmon is cooked, brush with more teriyaki sauce.
- Assemble bowls with cooked rice, salmon, broccoli, and carrots. Drizzle with remaining teriyaki sauce.
- Garnish with sesame seeds and sliced green onions, if desired, and serve immediately.
