Italian Sausage and Peppers

Ingredients

  • 1½ lb Italian sausage links
  • 1 tbsp Olive oil
  • 3 large Bell peppers (red, green, or yellow)
  • 1 large Yellow onion
  • 3 clove Garlic
  • 15 oz Crushed tomatoes
  • ½ tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ¼ cup Fresh basil (optional)
  • 4 Crusty bread or rolls (optional)

Steps

  1. Slice bell peppers and onion into strips. Mince garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add Italian sausage links and brown on all sides, about 8-10 minutes. Remove sausage and set aside.
  3. Add sliced bell peppers and onion to the skillet, cooking until softened, about 7-10 minutes. Add minced garlic and cook for 1 minute until fragrant.
  4. Return sausage to the skillet. Stir in crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 15-20 minutes, or until sausage is cooked through and flavors have melded. If desired, slice sausages into smaller pieces before serving.
  6. Garnish with fresh basil if using. Serve hot, either on its own or with crusty bread or rolls.
